it’s all about the taste.

Why do YOU drink coffee? It could be your way to start the day. It might be to take a break

from your hectic lifestyle. It might be a way to finish your afternoon strong or put a soothing

cap on your evening. But, would you drink it if it didn’t TASTE good? Probably not.

Coffee is grown in nearly 40 countries around the world. Raw green beans, or, roasted brown

beans, tend to look similar regardless of what country they were produced in. It’s the TASTE

that attracts us to coffee.

Some coffees have an earthy TASTE. Some give you a sense of chocolate. Others seem to have a

fruity or floral TASTE. Lots of coffees have multiple TASTES, depending on how they’re

processed and then brewed. What’s common is that they TASTE good to lots of people.

Some people only drink their coffee black. Some add sweetener. Some add cream. It doesn’t

matter as long as it TASTES good to you.

why do i want my coffee to have acid in it?

One of the challenges in delivering great coffee to people is helping to explain what coffee

terminology means. Here are four words that are important in judging coffee quality, though

they might not seem to be part of the coffee vocabulary.

Acidity All coffees have some level of acidity. The level of a coffee’s acidity gives either a

taste of “brightness” or “sourness”. “Brightness” and “Sourness” are not bad, unless they are

overwhelming. Acidity helps to give a coffee a memorable taste, not one that is dull or

unremarkable.

Bitterness All coffees have a degree of bitterness, which represents how much the coffee

leaves an aftertaste on the back of your mouth. Bitterness is one of the 5 taste sensations that

humans perceive on their tongues.

Earthiness A coffee which is described as earthy tends to give off an aroma of fresh earth or

wet soil (though clearly you don’t want that literally in your coffee). Earthiness and “mouthfeel”

sometimes are used interchangeably

Sweetness When a coffee is said to have sweetness, it basically means is that while one

characteristic of a coffee is distinct, no single characteristic overwhelms the taste of the coffee.
